Is Jim still building pedals? I haven’t seen him post any sort of updates at IG for a bit now.

I don't think he's not building pedals so much as doing other things. He's in 4,762 bands, recording others in his studio (Ft. Lawton Studio), and also picked up a gig as the amp and pedal tech at Mike & Mike's Guitar Bar (which looks like a killer store: https://mmguitarbar.com).
